Hot Smoked Sturgeon
White Sturgeon has a firm white meat; a full, rich flavor;
and, like salmon, a high oil content. It is one of
the best fish for smoking. In Medieval Europe, any
sturgeon found in the estuaries or landlocked lakes
was considered the property of the royal family.
