Sturgeon has a firm white meat; a full, rich flavor; and, like salmon, a high oil content. It is one of the best fish for smoking. In Medieval Europe any sturgeon found in the estuaries or landlocked lakes was considered the property of the royal family.

Simply use canned Smoked White Sturgeon by flaking for salads, dips and sandwich spreads. Mix mayonnaise and smoked sturgeon and spread on rye bread, or mix cream cheese and smoked sturgeon and spread on buttered rye bread and top with tomato slices and sprouts.
